ELECTRONIC NOSE SENSORY SYSTEMS FOR MEAT QUALITY CONTROL

Abstract

Researches confi rmed VOCmeter (electronic nose) to be an advanced meat quality control instrument, in particular to analyze the freshness of meat and meat products. Results show the possibility of VOCmeter to be used for meat species identifi cation, as well. Comparative experiments demonstrated the perspectives of instrumental systems for objective fl avor evaluation of meat and various meat products in order to avoid the “human factor” in panel testing. Simplicity, sensitivity and rapidity are the advantages of the above method.
